Little known and used, winter savory is a low, shrubby herb that comes into its own in winter with notes of marjoram, thyme and mint.
When to plant/sow in zone:
Requirements:
Good drainage; full sun
Soil:
Well-drained soil enriched with compost and/or well-rotted manure or organic pellets.
How to start: SEED: Sow direct in the ground or in punnets into seed-raising mix. Sow 3mm deep, 25cm apart. Keep moist. Germinates in 7-14 days. SEEDLING: Plant outside when seedlings are 5-10cm+ tall. Space plants 25cm apart. Can be grown in 20-30cm pot into premium potting mix. NOTE: Svory also grows easily from cuttings and divisions.
How to grow: Keep moist and mulch with straw. Apply seaweed solution or liquid fertiliser fortnightly. If soil is poor, apply organic fertiliser pellets monthly. Trim annually to keep compact.
When to harvest: Start harvesting from 8 weeks, by pinching off the tips or larger leaves.
